Even though the start of the school year is still a couple of weeks away I am already turning my mind to the frenetic pace that is particularly typical of the first term of school. You know what it is like, uniforms need to be prepared, books and stationery purchased and I start mentally planning how I will manage school lunches. I often find preparing lunches the most tiring part of the day. Instinctively I just want to go to bed but with a bit of planning and prepping I can put lunches together pretty quickly. That’s why I like Cheesy Zucchini Muffins. I can make a batch or two at the weekend and pop them in the freezer. Then they are ready to add to the lunch boxes when the final assembly happens on the morning before school.

Think Veg – Think Cheesy Zucchini Muffins

While I confess that zucchini is actually not a fave vegetable in my family, I can serve it up in these muffins without complaint. I find that two muffins make up the most part of a lunch and I can include a little salad as well. Or one muffin can be part of recess with a piece of fruit. They are filling and healthy and I have never had one knocked back. They are super tasty. You can’t really go wrong with them!

I like that Cheesy Zucchini Muffins are all about keeping it simple.  You just need zucchini, cheese, flour, eggs, butter and milk plus a few herbs of choice and you have a tasty muffin to please the fussiest lunch box critic,  Just a few main ingredients and you have such a delicious and filling lunch box alternative. I have been known to serve these up to the whole family, not just my children.  They are that good! And when you think that you are serving up a wonderful vegetable that is full of vitamin A they are even more remarkable.

Cheesy Zucchini Muffins

A handy way to serve up vegetables at lunch time and in the lunch box,

Ingredients

  • 2 medium zucchini grated
  • 1 brown onion grated
  • 1 cup tasty cheese grated
  • 1/2 cup parmesan cheese grated
  • 2 cups whole meal self raising flour
  • 2 eggs, beaten
  • 100 g butter melted
  • 1/2 cup whole milk
  • 1-2 tblsp fresh or dried herbs such as dill, parsley, oregano or rosemary Use one tbsp if using dried.

Instructions

  1. Grease and lightly flour the muffin tins. Combine grated zucchini, onion and cheese with the wholemeal sr flour. Mix together eggs, milk and butter and fold into the other ingredients. Spoon into prepared muffin tins – it will make 14 large muffins. Bake at 180°C for 20 minutes or until risen and golden. Allow to cool before removing from tins – you may need to run a knife around each muffin to release it.

Perfect for freezing for make ahead lunches. Delightful with a bowl of soup.
