Creamy Deliciousness

Chicken Meatballs in Creamy Mushroom and Sun-dried Tomato Sauce -this is one of our favourite dinners right now. Ready in about an hour and just so full of flavour.  Plus it is really easy to prepare.  There is no separate frying of the meatballs in oil.  You simply make them then let them cook in the oven while you make the sauce.

Chicken Meatballs in Creamy Mushroom and Sun-dried Tomato Sauce – Big On Flavour

I think the overall flavour of this dish is an absolute winner but the smoked paprika and garlic in the meatballs and then the sun-dried tomatoes in the sauce really pack a punch.  And the mushrooms create a wonderful umami flavour that I love.  Do you know that umami foods can actually curb your appetite?  Which is why this meal is extremely satisfying.

Protein, Fibre and Vitamin K

These meatballs are full of protein from the chicken. Mushrooms are full of fibre and baby spinach is rich in vitamin K among other nutrients.  And while in a creamy sauce it isn’t made with cream so is not overloaded with fat or cholesterol. These meatballs are delicious served over rice, pasta or polenta or you could even serve them with a side of mashed potato for a super filling meal.

Enjoy them with a glass of crisp white wine and you are set for a memorable meal.  It literally pleases all age groups in my family so I think you can be confident that it will be gratefully received. And if you happen to have left overs they are even better the next day so you can’t go wrong. It is also possible to make the meatballs ahead and freeze and then just make the sauce on the day (which takes less than 15 minutes) so you could have part of your meal. prepped and ready to go.

I urge you to try this meal.  Chicken Meatballs in Creamy Mushroom and Sun-dried Tomato Sauce. It is simply delicious!
