Have you ever wanted to bake something yummy yet you were out of eggs or low on butter? My chickens,  Milly and Molly are currently ‘off lay’ as it is winter so I have to supplement with bought eggs more than usual and sometimes I run out. Baking is therapy for me. It is the act of baking rather than eating the end result that is so therapeutic. So, I am not going to let a lack of ingredients stand in my way of producing something warm and comforting for the family to eat. Easy Egg-Free Date Loaf lets me have my baking fix even when the fridge is bare.

If you or anyone in your family can’t eat eggs due to an allergy then Easy Egg Free Date Loaf is perfect for you. And despite the fact it is egg free it cooks beautifully. You also only need a tablespoon (generous) of butter so if you are low on butter you will do just fine.

This is a time honoured recipe passed on to me by my mother. All I can remember from when she made it was that it didn’t last long. That and the fact I hated dates as a child yet I happily ate this loaf. Mum did a good job of hiding the fact that it had a cup if dates in it.  She was smart because dates are very beneficial to your health.

Feel free to add extra dates if you want a fruitier loaf.  I am using the quantities my mum recommends but there is room to add more.

Ingredients

  • 1 cup dried dates (plus extra if desired) roughly chopped
  • 1 tbsp butter generous
  • 1 tbsp cinnamon or mixed spice
  • 1 tsp bi-carbonate of soda
  • 1/2 cup sugar
  • 1 cup boiling water
  • 1 1/2 cups self raising flour

Instructions

  1. Preheat oven to 180°C. Line a conventional sized loaf pan. Combine chopped dates, butter, spice and sugar. Sprinkle over bi-carb soda. Pour over boiling water and mix to combine. Fold in flour until well combined. Spoon mixture into pan and bake in oven until risen and the loaf springs back when touched. Check the loaf after 30 minutes and if it springs back to touch it is ready. Enjoy with a cup of tea or coffee and don't forget to pack some in the lunch box.
