Time for a break…

I recently took a break (our Spring break). We went away to spend a few days in the country and generally slowed down to catch our breath before the final quarter of 2019. It was bliss! So tranquil and the air was so clean and fresh. When I take a break my girls pitch in and do jobs so that I have some time to do other things or to just dream. I am so blessed to have such thoughtful daughters.  One morning they told me it was pancakes for breakfast and my eldest daughter was in charge. This was the result – Light and Fluffy Pancakes. Served with maple syrup and the beautiful organic strawberries given to us by our friend Sally and which I also used to whip up a delicious smoothie.

I should say that Sally is totally committed to buying only organic produce and she goes to an organic produce market near us every week. I applaud her for this and I am motivated to seek out organic produce whenever I can.

Time Honoured Recipe

This recipe is a very old family recipe from my mum and I think it was her mother’s recipe. It is guaranteed to produce delicious, light and fluffy pancakes every time. If you try it once you’ll revisit it again and again. It’s so simple – just 4 ingredients.  Just mix them up, pour into a pan and flip.  And we did use an egg from Milly or Molly for extra free range deliciousness.

Once you’ve made your pancakes serve them with fruit- berries are fabulous or you could serve them with bacon and eggs. Maple syrup always does the trick too. I’ll admit, these pancakes are pure comfort but perfect to enjoy on lazy days when you have some time to prepare and enjoy them.

Light and Fluffy Pancakes

A simple recipe for fail-proof pancakes that will delight again and again.

Ingredients

  • 1 cup self raising flour
  • 1/2 cup sugar
  • 1 egg
  • milk enough to make the consistency of thick cream
  • 2 tbsp butter for greasing

Instructions

  1. Super easy, simply combine dry ingredients, whisk in egg and then whisk in milk until a batter the consistency of thick cream forms. Heat a frying pan (electric works really well). Grease the pan with the butter. Drop spoonfuls of batter into the pan but be careful not to crowd it. The pancakes will be ready to turn when bubbles form on the upside. Turn and continue to cook for about a minute. They are ready when they are golden brown.

    Enjoy with fruit and maple syrup or American style with bacon and eggs.
