Fresh, citrusy and full of fibre – Quinoa, Avocado and Chickpea Salad

This Quinoa, Avocado and Chickpea Salad is a new favourite for me.  I actually made this salad with me in mind.  I wasn’t trying to please all the palates in my family.  I wanted something that would tantalise my tastebuds.  It ended up working for four of us, my youngest just looked at it and hoped I wouldn’t notice she didn’t eat it!  But really, we have to feed ourselves first sometimes.  I mean feed our palates so that we get maximum variety and enjoyment out of our food.

So filling and full of taste

Quinoa is a rich grain that is full of fibre so it is super filling.  So much so that I had enough left overs for lunch the next day and I was not wanting for food after eating even a small bowl.  This salad became both the grain and salad when I last served Quick and Easy Chicken Souvlaki with Tzatziki and the pairing worked so well.  My number one taste tester (my husband) really enjoyed all the components of both dishes which says something because he grew up eating the very best Greek food cooked by both his parents. The teenagers of my family enjoyed it too.

There are a range of textures in this that gives it a beautiful texture.  For instance, you have the crunch of the cucumber, the graininess of the quinoa and the creaminess of the avocado and the smooth bite of the chickpeas.  The lime juice mixed with garlic gives it all the most beautiful freshness.  I can taste it now!

And the benefits are endless

There are so many benefits to the salad I am going to list them rather than wax lyrical!

quinoa – gluten free, higher in fibre than most grains and low on the glycemic index, very high in protein- a super food!

avocado – very high in vitamins C, E, K and B-6 as well as folate, magnesium and potassium, rich in omega 3 oils

chickpeas – high in fibre and protein and high in vitamins and minerals

lime- so full of vitamin C!

Wow! There are amazing benefits to this salad.  It is virtually a meal in itself.

This salad is a bowl of wholesome goodness.  I will give you a medal if you can get your youngest to eat it.  Maybe they will, let me know! But you should know that for you, you are getting so many benefits which make it a big bowl of self care really!

Quinoa, Avocado and Chickpea Salad

A salad superfood that is light and tangy with citrusy flavours. Self care in a bowl!

Ingredients

  • 2 cups quinoa tricolour looks nice
  • 1 ripe avocado
  • 1 400g tin chickpeas drained
  • 1 cucumber sliced and diced
  • 3 tbsp mint
  • 1 clove garlic
  • 1 lime juiced

Instructions

  1. Cook the quinoa as per the instructions on the packet. While cooking dice the cucumber and chop the mint. When the quinoa is cool I spread it on trays and sit them in the freezer for it to cool off, Combine cooked quinoa with cucumber, mint, chickpeas and sliced avocado. Mix the lime and garlic and stir through the salad. Enjoy!
