There is something satisfying about being able to make a healthy meal in 30 minutes. Being able to combine delicious flavours and components in a speedy meal ticks all boxes. And if it is a meal that is warmly received then you are way out in front. It is so hard to feel inspired mid week to produce healthy, nutritious meals but with a few ideas on how easily it is done you won’t be opting for take away as often. Simple Chilli Chicken And Green Vegetable Stir Fry is quick and easy to prepare, is healthy and super tasty. And served with rice you don’t need anything else for it to be a complete meal. If you have some time up your sleeve you could also opt to serve it with Loaded Fried Rice for the full at home ‘take away’ effect.

Speedy And Nutritious

For my Simple Chilli Chicken And Green Vegetables Stir Fry I choose to use crisp broccolini, green beans and spinach.  You may like to opt for different vegetables though like capsicum or baby bok choy.  I don’t blanch the broccolini or beans so they remain super crunchy.  For flavours I use sweet chilli sauce, a long red chilli, ginger, garlic and soy with some fish sauce as well.  I love the combination of these ingredients and the way they produce a full bodied flavour experience.  You can adjust the chilli if you like.  You can opt to use half the chilli or the whole chilli with half the seeds or the chilli without any seeds.  Be the judge of your family’s palate and flavour it to suit them.

For my stir fry I use chicken thighs.  I like the richer flavour of these but feel free to use chicken breast if you prefer.  Have all your ingredients ready before you cook.  Vegetables washed and trimmed, garlic and ginger chopped or minced and sauces ready for use.  I don’t slice the chicken thighs instead I break them up when they are cooked through – just me saving time! Use your wok if you have one but it doesn’t matter if you don’t a frying pan is just fine.  You will be eating this delicious meal in no time.

Ingredients

  • 1 long red chilli choose to use a whole chopped, deseeded or partially deseeded chilli
  • 2 cloves garlic chopped
  • 3 cm knob of fresh ginger peeled and minced/grated
  • 1/2 cup sweet chilli sauce
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 1 cup chicken or vegetable stock
  • 1 kg chicken thighs (or sliced breast if you prefer)
  • 2 handfuls fresh green beens topped and tailed
  • 1 bunch broccolini chopped
  • 150 g baby spinach leaves

Instructions

  1. Before you begin, mix together sweet chilli sauce, soy sauce and fish sauce and stock in a small jug. Heat a little oil in your wok or frying pan and brown the chicken until cooked through. Stir through the garlic, ginger and chilli and cook until fragrant. Add your vegetables and cook until spinach is wilted and broccolini and beans are bright green and crisp. Pour in the sauces and stock and cook until bubbling. Reduce the sauce a little and then serve the stir fry with your favourite rice or fried rice.
