This Simple Oat and Coconut Slice is from my childhood.  It is something my mother would make on a weekend probably in the hope we could take it school for morning tea, but it rarely lasted that long.  It is the same in my family.  I had to photograph the slice quickly after I made it because it was already half gone once I had turned my back for a short time.

And The Good News Is….

Look, this slice has benefits but it does include sugar.  That’s ok I think to include every once -in-a-while (everything in moderation).  The serves are quite small so it is easy just to dabble in it.  The fact that it includes oats is wonderful because oats are a superfood – full of fibre and wonderful for lowering blood sugar, for weight loss and combating heart disease.  Have a look at what the people at Healthline say about oats. And the coconut, it tastes beautiful and is believed to be high in antioxidants and is also good for managing blood sugar levels.

Egg Free (Apologies to Milly and Molly)

This slice is egg free.  Don’t get me wrong, I am by no means opposed to eggs. Milly and Molly would never allow me to let go of eggs.  I love eggs but this is a slice that doesn’t require them so is perfect if you don’t have any eggs on hand or if you simply can’t include them in your diet. So it is a very simple slice for which you probably already have the ingredients in your pantry.

I make Simple Oat and Coconut Slice for the girls’ lunchboxes or if someone has dropped in for coffee and I want to offer something baked and delicious. Also, I am happy to take it with me when visiting someone.  It is always a welcome treat. I confess that I do bake regularly, at least every week. Simple Oat and Coconut Slice

Ingredients

  • 150 g butter melted
  • 1 cup SR Flour
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup dessicaed coconut

Instructions

  1. Line an average size slice tin with baking paper. Preheat oven to 180°C. Combine dry ingredients then stir in melted butter, pressing the butter into the mixture to combine everything. When all butter is evenly absorbed, press mixture into slice tin and bake for 20 minutes or until golden brown. Serve in small squares - about 3cm x3cm. Take some time to enjoy with a cup of tea or coffee. Make sure there is some left for the next day!
