Here we are again, heading into cooler weather so you know what that means? It’s time to ramp up your immunity to protect yourself and your family from the winter lurgies – colds and flu (and that other nasty which is not only a hot topic at the moment but changing our lives beyond belief!). So this time I turned to Tomato Soup – Boost Your Health, Easily! Soups are great immunity boosters because of the wonderful nutrients they contain if you make them from fresh ingredients. And they are are perfect for boosting hydration which is so important for good health. Tomato soup – hello? Tomatoes are FULL of vitamin C – a great immunity support. They are rich in minerals such as calcium, phosphorous and potassium but they are also a major source of an essential antioxidant called lycopene which according to Healthline.com ‘has been linked to many health benefits, including reduced risk of heart disease and cancer.’ So this is a shout out to tomatoes – they are great for your health! Tomato Soup is easy and satisfying to make. To enrich the flavours and benefits I use a home made vegetable stock concentrate. Basically that means I took a bunch of vegetables that I like to cook with – carrots, celery (including the leaves) sticks, zucchini, leek, onion, garlic, herbs like thyme, rosemary, bay leaves and parsley together with a tablespoon of oil. I processed them until they were very fine then gently fried them in a little oil and voilà you have the base for delicious soups, risottos and casseroles. I have a whole bunch of little containers with about 10 tablespoons of this concentrate in each in the freezer. They are ready to pull out when I need them. And the flavour is out of this world. So fresh and SO good for you! So for your soups and whatever, try this stock concentrate. I like to serve Tomato Soup with homemade damper. I will share my recipe for this later as it is a great alternative to bread. This is especially helpful when bread is in short supply! So serve Tomato Soup – Boost Your Health, Easily! Ingredients

Vegetable Stock Concentrate

  • 4 sticks celery including leaves
  • 2 carrots chopped
  • 2 zucchini
  • 1 onion sliced
  • 2 cloves garlic
  • 1 leek trimmed and sliced (white part only)
  • 1/2 bunch parsley
  • 1 sprig rosemary
  • 3 sprigs thyme (fresh) (or three tablespoons dried)
  • 2 tbsp olive oil

Tomato Soup

  • 1 onion finely chopped
  • 1 clove garlic finely chopped
  • 3 tbsp olive oil
  • 2 tbsp paprika
  • 2 tbsp thyme (dried)
  • 3 400ml cans diced tomatoes
  • 10 tbsp vegetable stock concentrate as above
  • 8 cups boiling water
  • salt and pepper to taste

Instructions

Vegetable Stock Concentrate

  1. Add all vegetables, herbs and oil to a food processor and blitz until fine. Then transfer to an oiled pot and simmer for 30 minutes until soft.

Tomato Soup

  1. Heat oil in a large pot and add onion, garlic, thyme and paprika and fry until fragrant. Then add vegetable stock concentrate and tinned tomatoes then the boiling water. Bring to the boil and cook for about 30 minutes. Season with salt and pepper. You will probably need more salt than usual as the stock concentrate does not contain salt.

Recipe Notes

It may seem like cheating to use tinned tomatoes but remember that in the cooler months tomatoes are not in season.  By using tomatoes in a tin you are enjoying those that have been picked at the best time - and so much cheaper too!
