Nourish and protect yourself with this immunity boosting soup.
Add all vegetables, herbs and oil to a food processor and blitz until fine. Then transfer to an oiled pot and simmer for 30 minutes until soft.
Heat oil in a large pot and add onion, garlic, thyme and paprika and fry until fragrant. Then add vegetable stock concentrate and tinned tomatoes then the boiling water. Bring to the boil and cook for about 30 minutes. Season with salt and pepper. You will probably need more salt than usual as the stock concentrate does not contain salt.
It may seem like cheating to use tinned tomatoes but remember that in the cooler months tomatoes are not in season. By using tomatoes in a tin you are enjoying those that have been picked at the best time - and so much cheaper too!
