Chilli Lime Meatballs

Ingredients

  • 1 kg chicken or pork mince
  • 1 clove garlic chopped
  • 1 tbsp paprika
  • 2 eggs beaten

Chilli Lime Sauce

  • 8 long red chillis sliced
  • 6 cloves garlic
  • 1 tbsp fresh ginger grated
  • 200 ml water
  • 150 g white sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp fish sauce
  • 1 tsp salt
  • 1 dsp cornflour mixed with a little water
  • 1 lime juice and zest

Meatballs

  1. Set oven to 200°C. Combine garlic, paprika and egg with chicken or pork mince and form into golf ball sized meatballs. Place in a deep oven dish and bake in oven for 15 minutes until lightly browned.

Chilli Lime Meatballs

  1. Blitz the chillis and garlic in a food processor until roughly chopped.

  2. Combine water, sugar, vinegar, fish sauce and salt in a small saucepan over a medium heat until sugar dissolves. Add the chilli and garlic mixture and the ginger and stir over heat for around 10 minutes. Add the zest and juice of the lime.

  3. Add the cornflour mixture and stir until sauce coats the back of a spoon. Take off heat and test for seasoning.

  4. Pour sauce over partly cooked meatballs and continue to cook for half an hour until sauce is bubbling and meatballs are well browned.

  5. Serve with fluffy white rice for the ultimate comfort kick.
