A low sugar, creamy berry dessert that tastes amazing and looks beautiful.
Heat the raspberries and sugar in a little water until soft. Blend with a hand blender or in a blender until smooth to make a coulis. Blend yoghurt, cream cheese and vanilla until smooth. Layer mixed berries in the bottom of a glass or glass bowl. Top with yoghurt/cream cheese/vanilla mixture. Spoon over coulis and swirl through the mixture. Repeat until all berries and mixture are used, swirling the coulis through the mixture on top. Top with a few berries or a sprig of mint or even some crushed nuts.
