Crispy Vegetable Fritters with Dill Tzatziki

Crispy morsels of vegetable goodness that are delicious with dill tzatziki.

Ingredients

  • 2 lge zucchini grated
  • 1 carrot grated
  • 1 small eggplant finely chopped
  • 1 cup frozen corn kernels
  • 1 small bunch shallots
  • 3 eggs beaten
  • 100 g goats cheese
  • 1 cup parmesan cheese grated
  • 1 bunch dill chopped
  • 1/2 cup self raising flour
  • 1 cup olive oil for shallow frying

Instructions

  1. Combine vegetables, flour, cheeses and dill with beaten egg. Mixture should be slightly wet. Drop tablespoons of mixture in hot oil. Turn once so that both sides are golden, edges crispy and the fritter is firm. It usually takes only a couple of minutes each side. Serve with Dill Tzatziki.
