Favourite Orange Butter Cake

This zesty, light and delicately moist butter cake is fragrant with the taste of orange zest and juice.

  • 125 g butter
  • 2/3 cup caster sugar
  • 2 eggs free range
  • 2 oranges juice and zest, reserving 2 tbsp of zest
  • 1 cup self raising flour
  • 1/2 cup almond meal
  • 2/3 cup juice from the above oranges plus extra if necessary
  • 1 tbsp icing sugar to dust


  1. Preheat the oven to 180°C, Line and grease a springform pan (approx. 21cm). Cream the butter and sugar until light and fluffy. Add eggs beating in one at a time. Add in flour and almond meal alternating with adding the orange juice. Mix well until light and smooth. Spoon into cake tin and bake for approximately 40 minutes but best to check after 30 minutes until a skewer comes out clean. Allow to cool then dust with icing sugar and reserved zest.
