  • 3 tbsp olive or sunflower oil
  • 2 tbsp butter
  • 1 clove garlic finely chopped
  • 500 g mushrooms of your choice quartered or sliced
  • 1 bunch English spinach chopped roughly
  • 2 tbsp Greek yoghurt or more if you wish


  1. Heat the oil and butter in a frying pan until foaming. Add the garlic and fry gently. Don't brown. Add the mushrooms and turn them as they brown. Then add the spinach and cook it until it wilts. Take the pan off the heat and stir in the yoghurt. Add some cracked pepper and salt if you wish.
