Ingredients

  • 1 kg grass fed, locally sourced beef mince
  • 1 clove garlic minced
  • 2 eggs beaten
  • 1 tbsp oregano
  • 2 tins (400g) locally sourced diced tomatoes
  • 1 clove garlic finely chopped
  • 1 tbsp oregano or basil dried
  • 2 bay leaves
  • salt and pepper to taste

Instructions

  1. Combine mince with garlic, egg and oregano with salt and pepper. Form into dessert spoon full sized meatballs. Place in an oven proof casserole dish. Top with tinned tomato, garlic and herbs. Bake, covered in the oven set to 200°C for about 40 minutes. Serve over brown rice, pasta or mashed potato and garnish with sliced black olives and rocket leaves.
