Biscuit Base

  • 125 g butter softened
  • 3/4 cup brown sugar
  • 11/4 cup self raising flour
  • 3/4 cup dessicated coconut
  • 1 1/2 lemons juiced


  • 350 g icing sugar mixture
  • 100 g butter softened
  • 1 lemon juiced
  • 3-4 tbsp dessicated coconut extra


Biscuit Base

  1. Set the oven to 180°C. Beat the butter and brown sugar until creamed. Mix in coconut and self raising flour. Stir in lemon juice to create a soft dough. Press dough into a lined slice tin and bake for 20 minutes until golden. Allow to cool.


  1. Combine icing sugar, butter and lemon juice until a smooth icing forms. Spread over cooled base and sprinkle with extra coconut. Chill in the fridge for a few hours until icing is firm and the slice is easy to slice into small squares.
