No Bake Cacao and Tahini Protein Balls

Ingredients

  • 250 g Medjool dates deseeded
  • 4 tbsp tahini
  • 4 tbsp dried blueberries
  • 1 handful rolled oats
  • 1 heaped tbsp cacao powder
  • 1/2 cup dessicated coconut to coat if using

Instructions

  1. Process the dates in the food processor first to make a smooth paste. Add the cacao powder, blueberries, oats and tahini and process until a paste forms. Test the mixture to see if you can roll into a ball. Take a tablespoon full of the mixture and roll into a ball then. place on a tray. Repeat until all the mixture is made into balls.

  2. If making protein balls with coconut you can omit the oats and simply roll the balls in desiccated coconut at the end. (Include the oats for this version for extra fibre!)

  3. Keep protein balls in the refrigerator and enjoy as an energy boosting snack.
