Ingredients

  • 125 g butter softened
  • 1/2 cup golden syrup
  • 1/2 cup dark brown sugar
  • 1 tsp bi carb soda (baking soda)
  • 2 eggs beaten
  • 2 tbsp ground ginger or add to taste
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 3 1/2 cups plain flour plus extra

Instructions

  1. Preheat oven to 160°C. Melt butter, brown sugar and golden syrup. Boil lightly and add the bi carb soda allowing the mixture to bubble up. Turn off the heat and allow to cool. Add beaten eggs and vanilla. Combine dry ingredients.  Add wet mixture to dry ingredients.  Combine everything so that a sticky dough forms. Cover the bowl with cling wrap and place in the fridge for 1 hour. Roll out between sheets of baking paper – not too thin. Chill again in freezer for a few minutes  Cut out Christmasy shapes. Bake for 8 – 10 minutes until barely golden.
