Baked Eggs for a Lazy Sunday Breakfast

Beautiful and mellow these baked eggs are the perfect way to start your Sunday.

Ingredients

  • 8 eggs free range
  • 150 g leg ham
  • 8-10 button mushrooms
  • 100 g baby spinach
  • 200 ml cream

Instructions

  1. Cook mushrooms in a little butter in a small pan.  Add baby spinach and cook until wilted.  Divide ham, mushrooms and spinach between 8 half cup ramekins.  Crack one egg into each ramekin and top with cream.  Cook in oven at 180ยบ for 15 minutes.  Serve with hot, buttery toast.
