Apple Maple Muffins

A great lunch box option that has less sugar and more fibre plus lots of nutrients compared to cakes and biscuits.

  • 125 g butter softened
  • 1/2 cup pure maple syrup
  • 2 eggs
  • 2 small apples peeled and diced
  • 1 tsp cinnamon
  • 2 cups wholemeal flour
  • 1 cup milk or almond milk


  1. Preheat oven to 180°C. Beat butter and syrup. Beat in eggs. Add apple and cinnamon and mix to combine. Fold in flour and milk in batches. Spoon into muffin cases in muffin tray. Bake for 20 minutes until risen and golden.
