Apple, Cinnamon and Yoghurt Loaf

A wholefood sweet fix that satisfies the cravings for cake but ticks lots of boxes for food that is good for you.

Ingredients

  • 2 medium apples chopped in small pieces
  • 2 tbsp cinnamon
  • 3 tbsp brown sugar
  • 125 g butter
  • 1 cup brown sugar or
  • 1/2 cup maple syrup or rice malt syrup
  • 2 eggs beaten
  • 2 cups wholemeal flour
  • 1 cup Greek yoghurt

Instructions

  1. Preheat oven to 170°C Combine the apples with the cinnamon and 3 tablespoons of brown sugar.

  2. Cream the rest of the brown sugar or syrup if using with butter. Beat in eggs. Fold in apple and cinnamon mixture. Combine all these ingredients with flour. Fold in yoghurt. Spoon into a loaf tin lined with baking paper and bake for 50 minutes or until a skewer tests clean. Allow to cool for 10 minutes before removing to a wire rack. Serve sliced with or without butter and your favourite cup of tea or coffee.
