Easy Egg-Free Date Loaf is your answer to what to bake when you don't have eggs or a lot of butter.
Preheat oven to 180°C. Line a conventional sized loaf pan. Combine chopped dates, butter, spice and sugar. Sprinkle over bi-carb soda. Pour over boiling water and mix to combine. Fold in flour until well combined. Spoon mixture into pan and bake in oven until risen and the loaf springs back when touched. Check the loaf after 30 minutes and if it springs back to touch it is ready. Enjoy with a cup of tea or coffee and don't forget to pack some in the lunch box.
