Leftovers, Healthy Fats, Protein and Fibre

I have a steady supply of leftovers in my fridge as we work/study at home and it makes it easy for lunches.  Left overs even get sent to school.  My eldest daughter was feeling inspired the other day and developed this Chicken Nourish Bowl which was a feast for the eyes and a delight to the senses.  This is just a quick post to share how she did it. Using only what was in the fridge she put together a bowl of goodness to fuel us for the afternoon.

The ingredients are:

  • Sliced chicken schnitzel
  • Sliced avocado
  • A spoon of sauerkraut
  • A generous serving of burghul wheat
  • Some greens – baby spinach and massaged kale leaves
  • A scattering of pepitas

A Bowl of Superfoods

This is a complete meal – full of healthy fats, protein and fibre.  Did you know that burghul has more protein and fibre than quinoa? It is a hit in our house and tastes delicious.  I love that my daughter included sauerkraut. It adds such a zing and is great for your gut health.

I won’t be posting a recipe here as this meal as about the assembly of good, nutritious ingredients.  If you plan your meals and shopping well you could have all these ingredients ready to put together for your lunch too.

Feel free to serve this Chicken Nourish Bowl with cold ingredients or you could simply heat the chicken schnitzel and burghul up if you prefer it warm.

What Are My Options if I Don’t Eat Meat?

If you are vegan or vegetarian this nourish bowl would be great for you if you replaced the chicken with marinated tofu.
