This is another soup that my family loves, and it loves us! One Pot Green Lamb Soup is not only delicious but it is full of superfood vegetables. I will list the benefits but this soup is guaranteed to get your family eating greens from which they may otherwise recoil. Won’t eat kale? No problem! Broccoli is yuk? I can fix that! This soup will feed your family no less than 5 different vegetables in one sitting so if you serve this you deserve a nutrition medal.

The next best thing is it’s a one pot meal so you won’t have endless washing up. And it really doesn’t take long to cook – about 45 minutes including prep which isn’t too bad.

One Pot Green Lamb Soup

Ingredients

  • 500 g lamb steaks trimmed of fat
  • 1 leek trimmed, washed well and sliced
  • 4 cloves garlic finely chopped
  • 6 stalks kale trim the stalks off
  • 1 head broccoli broken into florets and stalk chopped
  • 3 zucchini chopped
  • 1 small bunch parsely reserve some for a garnish
  • 1 cup peas frozen is fine
  • 6-8 cups vegetable stock enough to just cover the vegetables
  • 1/2 cup cream

Instructions

  1. In the large soup pot, fry the lamb steaks in oil until browned but not well done. Remove and slice into strips. Add leek and garlic to the pan and fry until soft then add kale, broccoli and zucchini and fry so coated in oil. Add the lamb back into the pan. Then add the hot stock and allow the vegetables to cook down until soft. Add the peas and parsley and cook until peas are soft. Blend with a stick blender. Stir in cream. Serve steaming hot in bowls and garnish with parsley. Serve with your favourite bread.
