Orange and Oat Biscuits

Well, we are obviously in lockdown because I am just baking, baking, baking. I need to keep up with the demands of my family for morning and afternoon tea and my need to gently ease the strain of negative news reports plus the difficulties of not being able to see family and friends or just not doing regular things. Orange and Oat Biscuits are,  I think, a delightful recipe that has a refreshing taste and that is a bit different to your regular cookie.

Wholesome Goodness

Flavoured with orange zest and the sweetness of currants and raisins, or sultanas if you like, these biscuits are soft and moorish. I enjoy eating them as much as I enjoy baking them and I get compliments whenever I serve them.  A wholesome biscuit, they contain the goodness of rolled oats, orange zest and dried fruit.  Because Orange and Oat Biscuits, incorporate whole food goodness you won’t be tempted to overeat   Just one with your favourite brew is the perfect pick me up mid morning or afternoon.

Did you know….?

A fun fact about me is that I almost never buy cakes and biscuits.  I just find baking my own sooo satisfying that the pleasure is taken away if I buy them for myself.  That together with also feeling immense satisfaction that I know exactly what is in what I make compared with any number of additives and unnecessary amounts of sugar in a purchased biscuit or cake.  The things I bake don’t take excessive amounts of time.  This batch of biscuits literally takes me half an hour to whip up.  The result is worth that investment of time which isn’t at all excessive.

Ingredients

  • 125 g butter softened
  • 3/4 cup brown sugar
  • 1 egg beaten
  • 1/2 cup rolled oats (not quick oats)
  • 11/2 cups self raising flour
  • 1 orange zest only
  • 1/3 cup sultanas

Instructions

  1. Preheat the oven to 175°C. Cream the butter and sugar. Beat in the egg then fold in the oats, sultanas and SR flour. Lastly add the orange zest. Take half a tablespoonful of the mixture and roll into a ball. Place on a lined baking tray. Continue with the rest of the mixture adding the balls over two baking trays. Bake for 15 - 20 minutes until golden. Allow to cool as they will be very soft when just cooked.
