If you like foods with subtle flavours that melt in your mouth  you will love Red Salmon and Spinach Quiche.  It is all creamy deliciousness that will make you want to bake two at a time.  The best thing is that it comes together in no time for an easy dinner or filling lunch.  I usually do make two quiches at once so I can pack everyone off to school and work the next day with a generous slice.

Fast food

Full of good things like fish, eggs, spinach, cream and cheese this is simple food at its best and also so good for you. I do use frozen puff pastry for the base to make it a super quick meal.  In another post I will share my smoked salmon and leek quiche for which I make my own pastry. For a meal which comes together in 30 – 45 minutes I think it is acceptable to use frozen pastry. Think of this quiche as convenience food that is actually really good for you.

The Goodies Within

Do you know that canned red salmon contains higher amounts of omega 3 fatty acids than fresh salmon? It is an excellent source of protein and the omega 3 oils are beneficial for cardiovascular health. And all the little bones are full of calcium to strengthen your bones. Red salmon from a tin contains as much calcium as a glass of milk. So combined with the calcium in cream and cheese you have a truly calcium rich dish.

I love that this quiche is simple to prepare yet tastes rich and delicious. So much so that it will seem like you have taken a lot longer than half an hour to put it together.

Red Salmon and Spinach Quiche

Subtle, creamy and delicious this is a delicate, filling quiche that will satisfy everyone for lunch or dinner.

Ingredients

  • 1/2 bunch shallots finely sliced
  • 120 g baby spinach
  • 400 g tinned red salmon
  • 300 ml pouring cream
  • 3 eggs beaten
  • 2 sheets puff pastry, ready rolled, thawed
  • 1 handful parmesan cheese

Instructions

  1. Preheat oven to 200°C. Gently fry shallots and spinach until wilted. Combine eggs, cream and red salmon in a bowl. Gently place slices of thawed puff pastry over each other in a flan tin. Top with shallots and spinach. Pour over egg and salmon mixture and top with sprinkled parmesan cheese. Bake until puffed and golden. Enjoy!
